Hot-smoked Peppered Salmon
H. Forman & Sons has been smoking fish in London for over a century so we think they have the hang of it now. It's a carefully controlled procedure. Too much smoke and that's all you taste so their kilns are calibrated to release exactly the right amount. They produce a vast range of smoked fish, this is both ours and theirs favorites.
